Pasta with chicken sausage, roasted eggplant and sweet pepper

I love pasta !!! This is one of my all time favorite. You can use whatever veggies you have in your fridge to make this delicious meal. Now that the temperature is getting warmer, you can use all the fresh veggies from your garden or your local farmers market.

Here’s my recipe :

Ingredients: 3 Servings

1 box of Barilla pasta – can use other brands
1 lb. Chicken sausage (I used the pinwheel chicken sausage from Stew Leonard’s) – grilled
1 eggplant (cube size) – roast in oven or fry in pan
1 sweet pepper – any color – sliced
1/2 onion – diced

1/4 tbsp. butter
Extra Virgin Olive Oil
Salt and Pepper
Grana Padana cheese – can also use parmesan cheese

Boil your pasta according to the directions on the box. (Reserve about 1/2 cup of pasta water for later – this will make the dish saucier.)

Grill or fry your chicken sausage first.

Next, drizzle olive oil to the pan and brown the onions first. then you add the peppers to the onions. The eggplant was roasted in the oven before hand. Combine everything that was cooked. Now you can add the butter along with salt and pepper for taste. And last, I added the grana padana cheese. Yummy.
