Change is hard

Charlotte Sign.JPGI have recently moved from Connecticut to North Carolina. Why North Carolina? Well, first because of my hubby’s job and maybe for retirement but we also wanted to live in a place where we will still have the city life and longer months of warm weather.  We also chose NC because it was closer to the northeast in which my family still resides. We don’t have family here which makes it a bit harder to adjust. Although I did meet up with one of my relative residing here. Nice to know that there is some sort of family here.  I do miss my family and friends though.

It has been 4 months now and I can tell you that I really like it here.  Before moving here, I wasn’t sure how I would feel about the move so I kept telling myself that if I don’t like it, I can still go back.  I think I am here to stay ….

Here’s a synopsis of what has been going on in my life so far –

My Neighbors: I have already met many of my neighbors in the first month of moving here.  They are all very nice.  I’ve already attended 2 parties and met many more people from adjoining neighborhoods.  The homes here are divided by sub divisions and is different from where I came from.  Finding a home is very stressful especially when you don’t know the areas and the only source was from blogs and city-data.  We were very lucky to find the house that we are in today.

Shopping:  OMG!!!  We are so close to all the shopping areas here.  The Premium outlet is only 20 minutes away and the other shops like Trader Joes, Whole Foods, Target, Michaels, Walmart, Restoration Hardware, Nordstrom, and many more are only 15 minutes.  Too many to list.

Furniture shopping – We drove up to Hickory, NC which is the furniture outlet and we bought several pieces of furniture there.  The prices are half compared to Connecticut.  We didn’t get a chance to drive up to High Point, NC yet which is another high end furniture outlet but will probably do that next year.

Tourists Attractions:  Sport – The NFL Carolina Panthers and the Charlotte Knights which is located in the city area call “UPTOWN” here.  And is also home of the Charlotte Hornets (basketball – Jeremy Lin).  Nascar is also big here in Charlotte.

Etsy – I am still sewing but not listing as much because of the move. Fall is approaching and the holidays is just around the corner.  I will need to get busy again.

I can go on and on but I will try to update as much as I can.

Pasta with chicken sausage, roasted eggplant and sweet pepper

I love pasta !!! This is one of my all time favorite. You can use whatever veggies you have in your fridge to make this delicious meal. Now that the temperature is getting warmer, you can use all the fresh veggies from your garden or your local farmers market.

Here’s my recipe :

Ingredients: 3 Servings

1 box of Barilla pasta – can use other brands
1 lb. Chicken sausage (I used the pinwheel chicken sausage from Stew Leonard’s) – grilled
1 eggplant (cube size) – roast in oven or fry in pan
1 sweet pepper – any color – sliced
1/2 onion – diced

1/4 tbsp. butter
Extra Virgin Olive Oil
Salt and Pepper
Grana Padana cheese – can also use parmesan cheese

Boil your pasta according to the directions on the box. (Reserve about 1/2 cup of pasta water for later – this will make the dish saucier.)

Grill or fry your chicken sausage first.

Next, drizzle olive oil to the pan and brown the onions first. then you add the peppers to the onions. The eggplant was roasted in the oven before hand. Combine everything that was cooked. Now you can add the butter along with salt and pepper for taste. And last, I added the grana padana cheese. Yummy.

Welcome Spring !

Welcome SPRING!!  It is finally here.  It is a beautiful day here in Connecticut.  Today was a busy morning for me.  I had a few orders from my ETSY shop to complete before I get to go out and enjoy this beautiful spring weather.  This is how I started my day :

Smoothie:  I made myself a different smoothie which I added a new GREEN juice called “Naked” which I purchased from Costco.   I am not promoting this juice since I am not a doctor or a nutritionist so this is just my opinion.  I just wanted to give this a try and see if this would be just as good as the real thing.  It does say that it is 100% juice smoothie so I will try it.  I did however “Googled” this juice and read some pros and cons on this product but I feel that as long as it doesn’t affect my health, then it should be okay.  This is just my opinion and I am sure that everyone has their own opinion on this “NAKED” juice and would love to hear from them.  It comes in a few flavors but I decided on the “GREEN MACHINE” juice which has a blend of 5 juices with added ingredients.  I tasted it alone at first but don’t like it but as long as I blended it with other ingredients, then it is fine.   I added a banana, strawberries, an orange, a tbsp. of organic ground flax seed, baby carrots, low acid orange juice and the green juice.   It doesn’t taste bad, I like it and will continue to use it.  Off course the real greens are better so it is what it is.



Spring:  The temperature and weather outside is perfect for spring.  I feel good.  I bought myself some flowers yesterday to start off the season.  I adore flowers and they brighten my day.  Go out and treat yourself to a beautiful bouquet of flowers.  It is worth it. Peanut Butter, Jelly and Banana Sandwich

I know this may not be new to some people but it is to me. For those of you who never had a banana added to your typical PB&J sandwich, this is yummy and you should give it a try.

Anyways, growing up in Chinatown/Little Italy in New York, I didn’t eat PB&J as much as some folks did. I grew up eating Chinese pastries (Custard tart, roast pork bun, etc.) which is our go to food (this is our PB&J equivalent).

This sandwich was made by my neighbor, Martha aka “Marty” who I spend a lot of time with. We enjoy this together with a cup of green tea.

By just adding a sliced banana to your typical PB&J sandwich, you will get your potassium for the day too. Enjoy.

Here’s another thing I learned about PB&J. I didn’t know that you only spread the peanut butter on one side of the bread. My husband didn’t have the heart to tell me but he did after I made it for him for lunch one day. LOL.

Now that I live in the suburbs and all grown up, I get to experiment with different types of food (which I will blog more of throughout the year).

Ingredients: 2 slices of bread, peanut butter, jelly, and a small banana

This picture is taken from my backyard in Connecticut. It is so beautiful and peaceful. We are expecting 12-18 inches of snow here. Anyways, gotta go out to help hubby with the shoveling. Thank goodness for the snow blower. What a life saver. Stay warm !

Time to head south. But then again, they were also hit with snow this year.
